This family friendly Gastro Pub is set in the centre of Chester and is currently looking for an experienced and dynamic Head Chef with a background of working in high volume British Gastro pubs. Managing the brigade of up to 8 chefs to ensure the highest quality of food production, using all fresh and local produce to deliver exceptional mouth-watering menus.
Established for 6 years this busy venue is frequented by families and has a healthy share of group & party bookings.The menu offers classic British favourites created with flair, featured dishes inspired by flavours from across the globe along with classic grills and fresh seafood.
Ideally with a proven, solid background working in a similar style venue, you will be capable of delivering all aspects of the kitchen operation, including recruitment and training of staff, food safety compliance, and maintaining financial control. You will be aware of and ensure that those responsible to you are aware of all legislation that is relevant to your work and ensure that all legal requirements are met including: Licensing; Health and Safety at Work, COSHH, Environmental Health, Fire Precautions and any others.
You will be expected to design and deliver all menu’s working alongside Executive Chef support where necessary and within the brand guidelines.You will set & maintain standards of food quality in terms of taste, presentation & service in a style upholding the highest of standards. You should have the ability to work comfortably in all fields of kitchen operation including pastry, canapés, finger buffet, hot fork buffet, a la carte, cold larder, fish and world cuisine.
·Working Patterns: Full Time – 48 hours per week over a 4 day working week
·Basic Salary: £30k-£35k – Dependant on age & experience

·Overall responsibility for daily operations in the kitchen
·Creation & implementation of new menus
·Costing of dishes in line with budgeted GP and operating system (Procure Wizard)
·Management of Health and Safety of all aspects of food safety
·Adhere to guidelines in accordance with HACCP and FCA
·Manage, train and recruitment of brigade of chefs
·Establishing strong relationships with suppliers
·To show alertness, vigilance and attention to detail of all work
·Ensure that Business Critical Agenda is carried out to a high Standard
·Ensure that all members of the kitchen brigade are fully aware of and achieve their objectives
To successfully fill this role, you should maintain the attitude, behaviours, skills and values that include:
·Food safety Level 3 (minimum)
·C&G or BTEC in Professional Cookery (advantageous)
·Experience working with fresh produce (essential)
·Previous experience in high end dining
